About Us

Sap House Meadery sits between the Lakes Region and the White Mountains of New Hampshire and has been making award-winning craft mead since 2011.

It was founded by two cousins, Ash Fischbein and Matt Trahan, who rebuilt an old storefront in downtown Center Ossipee with a vision of reimagining what mead could be and bringing life back to their hometown. Every bottle is still made there today.

Our meads cover every taste and style, from dry to sweet and still to sparkling. You can find them in stores and restaurants across New England, New York and New Jersey, taste them at either of our two locations, or order online and have them shipped to your door in 47 states.

How we make mead

Mead is honey, water and time. We use a traditional no-boil method, fresh local ingredients and significant aging to make meads that drink drier and lighter than most, with real complexity and body. Many meads are either very flavorful but very sweet, or light and dry but thin; ours aim for both balance and depth.

Our range runs from wine-like signature meads such as Traditional, Sugar Maple and Vanilla Bean, to barrel-aged and wild-foraged experiments, to light, sparkling session meads in cans. Learn more about mead.

Two places to taste

Ossipee is where it all started and where we still produce every mead. The tasting room at 6 Folsom Rd pours flights, mead cocktails and cheese boards, hosts our Dinner & Show concert series, and is open Saturday and Sunday 12–4.

North Conway opened in 2025 at Norcross Place in downtown North Conway Village: a full restaurant and bar, bottle shop and tasting room with a street-side patio and a roof deck looking out at Cranmore and Main Street. Open Sunday–Wednesday 12–8 and Friday–Saturday 12–9.

Awards

Our meads have medaled at the Mazer Cup International Mead Competition (Gold, Hopped Blueberry Maple) and the Finger Lakes International Wine Competition (Gold for Vanilla Bean and Ossipioja; Bronze for Sugar Maple), among others.
