Barrel Aged Meads

These are our most highly-regarded meads. We pair varietal monofloral honeys with previously spirited barrels to combine into truly unique drinking experiences. In short, monofloral honeys have distinct flavors derived from the bees pollinating a single type of flower. We taste these honey and imagine what kind of spirit flavor profile would pair. Then we scour the world for one of those barrels.
