One of the core elements of our mission at Sap House Meadery is to push the boundaries of what mead can be. One of our projects that we are most excited about launching is our Barrel Series. We have been aging our meads in oak nearly since the beginning, albeit on a limited scale. Now, with our recent expansion, we can really expand the program and explore the endless combinations and nuances of oak and honey.
One of our very first barrel aged batches will also be one of the most aged. It is a knotweed sweet traditional that will be aged in a dark rum barrel for 21 years. It will be named Ethan, after Ash's first son who was born in April of this year. It seems fitting to begin a project that will, by necessity, take decades to truly yield

- The relationship of flavors between honey varietals and various strains of oak, char or prior spirits aged in the barrel.
- How various honey varietals and other ingredients age over long time-spans in oak.
- Wild and crazy ideas like putting a black birch-smoked traditional in a Laphroaig cask.
